Chicken Manchurian

Introduction

Chicken Manchurian is a popular Indo-Chinese dish that blends the fiery flavours of Chinese sauces with Indian spices. Crispy chicken chunks are tossed in a tangy, spicy, and slightly sweet sauce, making it a favourite starter or main course with fried rice or noodles.

Ingredients

For Chicken

  • Boneless chicken – 400g (cut into cubes)
  • Cornflour – 2 tbsp
  • All-purpose flour – 2 tbsp
  • Egg – 1
  • Salt and pepper – to taste
  • Oil – for frying

For Manchurian Sauce

  • Garlic – 1 tbsp (finely chopped)
  • Ginger – 1 tbsp (finely chopped)
  • Green chilies – 2 (slit)
  • Onion – 1 (cubed)
  • Capsicum – 1 (cubed)
  • Soy sauce – 2 tbsp
  • Red chili sauce – 1 tbsp
  • Tomato ketchup – 2 tbsp
  • Vinegar – 1 tsp
  • Cornflour slurry – 1 tbsp cornflour + 2 tbsp water
  • Salt and pepper – to taste
  • Spring onion greens – for garnish

Recipe

  • Prepare Chicken:
  • Marinate chicken cubes with salt, pepper, egg, cornflour, and flour.
  • Deep fry until golden and crisp. Set aside.
  • Make Sauce:
  • Heat 2 tbsp oil in a wok. Sauté garlic, ginger, and green chilies.
  • Add onion and capsicum. Stir-fry on high flame for 2-3 mins.
  • Add Sauces:
  • Add soy sauce, chili sauce, ketchup, and vinegar.
  • Mix well. Add cornflour slurry and stir until sauce thickens.
  • Combine:
  • Add fried chicken pieces. Toss to coat well in the sauce.
  • Serve:
  • Garnish with spring onion greens and serve hot.
