Introduction
Chicken Manchurian is a popular Indo-Chinese dish that blends the fiery flavours of Chinese sauces with Indian spices. Crispy chicken chunks are tossed in a tangy, spicy, and slightly sweet sauce, making it a favourite starter or main course with fried rice or noodles.
Ingredients
For Chicken
- Boneless chicken – 400g (cut into cubes)
- Cornflour – 2 tbsp
- All-purpose flour – 2 tbsp
- Egg – 1
- Salt and pepper – to taste
- Oil – for frying
For Manchurian Sauce
- Garlic – 1 tbsp (finely chopped)
- Ginger – 1 tbsp (finely chopped)
- Green chilies – 2 (slit)
- Onion – 1 (cubed)
- Capsicum – 1 (cubed)
- Soy sauce – 2 tbsp
- Red chili sauce – 1 tbsp
- Tomato ketchup – 2 tbsp
- Vinegar – 1 tsp
- Cornflour slurry – 1 tbsp cornflour + 2 tbsp water
- Salt and pepper – to taste
- Spring onion greens – for garnish
Recipe
- Prepare Chicken:
- Marinate chicken cubes with salt, pepper, egg, cornflour, and flour.
- Deep fry until golden and crisp. Set aside.
- Make Sauce:
- Heat 2 tbsp oil in a wok. Sauté garlic, ginger, and green chilies.
- Add onion and capsicum. Stir-fry on high flame for 2-3 mins.
- Add Sauces:
- Add soy sauce, chili sauce, ketchup, and vinegar.
- Mix well. Add cornflour slurry and stir until sauce thickens.
- Combine:
- Add fried chicken pieces. Toss to coat well in the sauce.
- Serve:
- Garnish with spring onion greens and serve hot.
